Ingredients You’ll Need
You only need 3 ingredients for this recipe! Here’s a quick overview; measurements are in the recipe card below.
- Boneless Center Cut Pork Loin Chops: Lean, affordable and easy to shred once they’re slow cooked until tender.
- Buttermilk: Our secret ingredient! It marinates the pork before cooking and adds a subtle tangy flavor.
- Kinder’s Buttery Steakhouse Seasoning: An easy shortcut that adds all the savory flavor without measuring a bunch of individual spices.
Can I Use a Different Seasoning?
We love Kinder’s Buttery Steakhouse Seasoning because it gives the pork so much flavor with one ingredient. If you can’t find it, use your favorite savory steak or pork seasoning. Just keep an eye on the salt since seasoning blends can vary quite a bit.
How to Make Slow Cooker Pork Chops
These slow cooker pork chops couldn’t be easier!
- Marinate: Add the pork chops, buttermilk and seasoning to a gallon-size zip-top bag. Seal and refrigerate for 1-24 hours.
- Slow Cook: Transfer everything to the slow cooker. Cover and cook on LOW for 6-7 hours or HIGH for about 4 hours.
- Shred: Once the pork is fall-apart tender, shred it with two forks.
- Serve: Spoon the pork over mashed potatoes and top with gravy, if desired.
That’s it! No browning, no complicated sauce and barely any cleanup.
How to Make Gravy
Want gravy for those mashed potatoes? You can thicken the flavorful juices right in the slow cooker!
During the last 20 minutes of cooking, stir in 1 tablespoon EZ Gel. Or make a slurry with 2 tablespoons cornstarch + 3 tablespoons water, then stir it into the slow cooker. Cover and continue cooking until the gravy has thickened.
Pro Tip: Always mix the cornstarch with cold water before adding it to the slow cooker so you don’t end up with lumps.

How Long Do Pork Chops Take in the Slow Cooker?
For this recipe, cook the pork chops for 6-7 hours on LOW or about 4 hours on HIGH. We prefer LOW when there’s time because the pork has plenty of time to become fall-apart tender.
Keep in mind that slow cookers vary, and thinner pork chops may cook more quickly.
Tips for the Best Slow Cooker Pork Chops
Don’t skip the marinade. Give the pork at least an hour in the buttermilk; overnight is even easier if you want to prep dinner ahead.
Cook on LOW when possible. We prefer the texture after a long, slow cook.
Don’t expect picture-perfect chops. These are meant to become fall-apart tender and shreddable rather than stay intact.
Taste before adding salt. Kinder’s seasoning already contains salt, so you probably won’t need much more.
Save the cooking liquid. Don’t throw away all that flavor! Use it to make gravy for serving over the pork and mashed potatoes.
Troubleshooting Slow Cooker Pork Chops
If you’re going for the fall-apart texture shown here and the pork won’t shred easily, it may need more time. Slow cookers vary, so continue cooking and check it again later.
Don’t panic! Buttermilk can separate during the long cooking time, so the liquid in the slow cooker may not look perfectly smooth. That’s normal. Shred the pork and use the flavorful cooking liquid to make gravy if desired.
Boneless pork loin chops are lean, so cooking time matters. Slow cookers run at different temperatures, and thinner chops may be ready sooner than thick ones.
We recommend at least 1 hour so the pork has time to pick up flavor from the buttermilk and seasoning. For the easiest prep, assemble everything the night before and refrigerate it until you’re ready to cook.
We developed this recipe with boneless center-cut pork loin chops, so that’s what we recommend for the most consistent results. Bone-in chops may require a different cooking time.

What to Serve with It
Mashed potatoes are hands-down our favorite side for these pork chops, especially with plenty of gravy spooned over the top. They are also superb over rice or cooked pasta. Add a simple vegetable and dinner is done!

How to Store and Reheat Leftovers
Store leftover pork in an airtight container in the refrigerator. Be sure to save some of the cooking liquid or gravy with the meat to help keep it moist when reheating.
Reheat individual portions gently in the microwave or warm larger amounts on the stovetop until heated through.

Sometimes the least glamorous dinners are the ones that save the day! These slow cooker pork chops take just 3 ingredients and a few minutes of prep, then the crockpot does the rest. Serve that fall-apart tender pork over mashed potatoes with plenty of gravy and you’ve got an easy, inexpensive dinner worth keeping on repeat.
