Lazy Day Chicken Sandwiches | Simply Wanderfull

Here’s a recipe from a friend and now shared with you my friend. I just love an easy recipe that tastes amazing! My friend let me in on her secret for the best chicken ever! Her secret to amazing chicken made easy is marinating the chicken in Kraft Salad dressing! She calls it Lazy Day Chicken!

 

I had some nice freshly baked whole grain bread that I picked up from my local bakery and decided to make grilled chicken sandwiches.

Now let’s talk about the toppings. I just love adding flavour through toppings! I am sort of obsessed with that. Since we were using Kraft a balsamic dressing, I thought it would be tasty to make the chicken sandwich toppings with an Italian twist!

Toppings:

Pesto (I made my own, but you can absolutely use store bought pesto)

Roasted peppers sliced from a jar

Roasted tomatoes that are so worth the time roasting in the oven

homemade garlic feta dip

mozzarella cheese

So many flavours happening, how can you go wrong?

After you grill up your chicken and while it’s resting, get all of your toppings ready and then assemble your sandwiches. Grill up your sandwich in a frying pan until the bread is nice and toasty and the mozzarella cheese has melted. Slice up that sandwich and serve with an arugula salad tossed in some balsamic dressing and enjoy!

Lazy Day Grilled Chicken Recipe:

Add the chicken and salad dressing to a ZipLoc bag. Marinate your chicken for at least 1 hour. Preheat your grill on high. Grill the chicken, 5-7 minutes per side. Remove from the heat and let it rest. I like to slice the chicken for the sandwiches.

Garlic Feta Dip Recipe:

  • 4 ounces feta cheese crumbled

  • 1 cup plain yogurt

  • 2 cloves garlic minced

  • 1 tbsp. fresh lemon juice

  • 1 tbsp. extra virgin olive oil

  • Salt and pepper to taste

  • Optional: chopped fresh herbs such as parsley or dill for garnish

Easy Roasted Flavour Bomb Grape Tomatoes Recipe:

1 package of Flavour Bomb Grape Tomatoes

Salt & Pepper

Preheat oven to 410 degrees. Toss the Grape tomatoes with salt and pepper. Place on a parchment lined baking tray. Bake in the oven for 20 minutes. Remove from the oven and cool slightly. I like to add 1/3 of the tomatoes to a food processor and puree them. Add the tomatoes to the puree and serve as you like.
