This Crispy Greek Pasta Salad takes everything we love about a classic Greek pasta salad—crisp vegetables, salty feta, briny olives, and a tangy homemade dressing—and adds crispy air-fried pasta for the most incredible crunch. I’m absolutely obsessed! It’s fresh, flavorful, and honestly one of the best pasta salads I’ve made in a long time.

This crispy viral pasta salad comes together in just a few simple steps. The crispy air-fried pasta adds an irresistible crunch that takes a classic Greek pasta salad to a whole new level.

  1. Make the Dressing: Whisk together the olive oil, red wine vinegar, garlic, tzatziki, lemon zest and juice, oregano, salt, and pepper until smooth.
  2. Cook and Crisp the Pasta: Cook the rotini according to package directions until al dente. Drain, rinse with cold water, and toss with the pesto, Parmesan, and a drizzle of olive oil. Air fry at 400°F for 10-12 minutes, shaking occasionally, until golden and crispy.
  3. Assemble the Salad: In a large bowl, combine the crispy pasta, cucumber, bell pepper, red onion, tomatoes, feta, and olives.

I’ll be honest, I wasn’t sure if crispy pasta salad was going to live up to all the hype. One bite in and I was completely sold. For the Dressing

  • In a small bowl whisk oil, vinegar, garlic, tzatziki, lemon zest, a squeeze of the lemon, oregano, salt and pepper.

    ½ Cup Olive Oil, ⅓ Cup Red Wine Vinegar, 2 Cloves Garlic, 1 Lemon, 1 teaspoon Dried Oregano, Salt and Freshly Ground Black Pepper, ½ Cup Tzatziki

Cook the Pasta

  • To cook the pasta, bring 4 quarts water and 1 tablespoon salt to a boil.

    1 Pound Rotini Pasta

  • Add pasta and cook according to package instructions, about 7 to 10 minutes or until al dente.

  • Drain well and rinse with cold water.

  • Toss the pasta with the pesto, parmesan and a drizzle of olive oil.

    2 Tablespoons Pesto, ¼ Cup Parmesan Cheese, Extra Virgin Olive Oil

  • Preheat the air fryer to 400℉ and place the pasta in for 10-12 minutes, shaking occasionally until browning and crispy

For the Salad

  • In a large bowl, combine cooked crispy pasta, pesto, cucumbers, bell peppers, onion, tomatoes, feta, parmesan and olives.

    1 English Cucumber, ⅓ Cup Bell Pepper, ¼ Cup Red Onion, 1 Pint Grape Tomatoes, 8 Ounces Feta Cheese, ½ Cup Kalamata Olives

  • Drizzle with dressing. Salt again to taste, this is super important to do!!

  • Toss gently until uniformly combined and serve.

Pasta Salad can be stored for about 5 days in the refrigerator.
