Ever since then, I’ve been obsessed with recreating that perfect diner-style patty melt at home. Sometimes I go classic with Swiss cheese on rye, other times I swap in cheddar, sourdough, or a quick burger sauce depending on my mood.

That grease and sauce dripping down my fingers is what officially made me fall I love with sauces and spreads and I’m still a believer all these years later. The beauty of a patty melt is that it’s simple, comforting, and almost impossible to mess up.

What Is a Patty Melt?

A patty melt is a sandwich that’s part hamburger and part grilled cheese. It’s made with seasoned beef patties, caramelized onions, melted cheese, and toasted bread instead of a traditional hamburger bun.

Patty melts are usually cooked on rye bread, but sourdough, Texas toast, or white bread also work great.

Patty Melt vs Hamburger

A hamburger is served on a bun and usually topped with traditional burger toppings like lettuce and tomato. A patty melt is served on toasted bread with melted cheese and caramelized onions, giving it more of a grilled cheese vibe.

Patty Melt vs Smash Burger

A smash burger is cooked by smashing the beef thin on a hot griddle to create crispy edges. A patty melt uses a slightly thicker burger patty and is assembled like a sandwich with cheese and toasted bread.

Ingredients You’ll Need

For the Patty Melt

  • Ground Beef: We like 85/15 ground beef for juicy flavorful patties.
  • Onions: Slowly caramelized onions add sweetness and classic diner flavor.
  • Butter: Helps toast the bread golden and crispy.
  • Vegetable Oil: Keeps the burgers from sticking and helps create a great crust.
  • Kosher Salt: Enhances the flavor of the beef and onions.
  • Black Pepper: Adds simple seasoning and balances the richness.
  • Sourdough Bread: Crispy buttery bread that holds up perfectly to the juicy filling.
  • Swiss Cheese: Melty, nutty, classic patty melt flavor.
  • Cheddar Cheese (optional): Adds extra gooey richness and sharp flavor.

For the Sauce

  • Mayonnaise: Creates the creamy base for the sauce.
  • Ketchup: Adds sweetness and tangy flavor.
  • Sweet Relish: Gives the sauce classic diner-style flavor.
  • Worcestershire Sauce: Adds savory depth and richness.
  • Garlic Powder: Adds subtle savory flavor.

PRO TIP: If I’m in a hurry, I just use 1,000 island dressing for the sauce.

Best Bread with Patty Melts

Most recipes I’ve tried use rye bread, but not everyone in my family is a fan so we go with sourdough bread. A good quality white bread works great too!

Best Cheese for Patty Melts

Swiss cheese is the classic choice because it melts beautifully and pairs perfectly with caramelized onions. We also love using cheddar, American, provolone, or a combination of cheeses for extra flavor.

What to Serve with Patty Melts

French fries are the most classic pairing to eat with patty melts but any side dish you would serve with hamburgers will work great with patty melts too. Some of our favorites are potato salad, macaroni salad or Mexican street corn salad.

Make Ahead and Reheating

Once patty melts are assembled, they won’t store very well because the bread will get soggy. If you know you are going to have leftovers, store all the components separately and then assemble and toast the sandwiches.

Reheat the patties and melt the cheese all on the stovetop over medium heat in a cast iron skillet.
